CRISPY POTATO FRENCH FRIES

INGREDIENTS
Potato (medium) 4
Salt to taste
Ice water
Oil for frying
Chat masala (optional)

METHOD
- Slice the potatoes into 1 inch thick sticks. Using a French fry cutter makes this much easier.
- Soak the potato slices in ice water for a minimum of 1 hour, this process removes the starch which makes for extra crispy fries.
- Rinse the fries twice with cold water.
- You don’t have to soak them, you can just give them a good rinse if you don’t have time.
- Then place them on clean kitchen cotton napkin press, pet and dry the potatoes.
- Heat oil in a pan keep the flame to medium. the oil should be medium hot.
- Carefully add the potatoes to the oil and fry for about 5-6 minutes. The oil should bubble lightly, we’re only heating the potatoes, we don’t want them to crisp yet.
- Place the cooked potatoes on a paper towel lined plate and fry the rest of the remaining batches.
- Now increase the flame to medium-high or high, and fry each batch a second time until they are crisp and golden-brown, about 5 minutes or so.
- Remove them and place them on dry paper towels. Sprinkle with salt as soon as they turn out.
- Serve with ketchup or any favourite dip and enjoy!
