AFGHANI PULAO (AFGHAN PILAF)

Kabuli Palaw or Afghani Pulao is a national dish of Afghanistan and no celebration is complete without this super yummlicious dish.The most important thing for making Kabuli palau is to choose the good quality of rice.So Let’s start this delicious and super easy recipe of Afghani Pulao. 




PREPARATION TIME: 10 mins        COOKING TIME: 1 hour 10 mins    SERVING: 4-6

INGREDIENTS

For Afghani Pulao Masala:
Caraway seeds (Kala zeera) 1 tsp
Green cardamom 6-7 
Cumin seeds 2 tbsp
Black cardamom 2 (tak out the seeds & discard the pot)
Cooking oil 1/2 cup
Carrots julienne 2 cups 
Sugar 3 tbsp 
Raisins 1/2 cup washed & soaked 
Onion sliced 2-3 medium 
Mutton 750 gm 
Salt to taste
Afghani Pulao Masala 1 & 1/2 tbs or to taste 
Boiling water 4 Cups or as required 
Rice sella 500 gm (soaked for 1 hour) 
Pistachio 20
Almond  20


METHOD
  • For Afghani Pulao Masala, In spice mixer,add caraway seeds,green cardamom,cumin seeds,black cardamom,grind to make a coarse powder.(Don't make it powder form)
  • In a large pot,add oil, carrots and sugar,mix well and fry for 2 minutes then take out in a bowl.
  • Add raisins, almond, pistachio and fry for 2-3 minute set aside for later use.
  • In the same pot,add onion and fry it til got brown.
  • Now add mutton and mix well until changes color, add salt,prepared afghani pulao masala (1 & 1/2 tbs) ,mix well and cook for 5 minutes.
  • Add boiling water, mix well cover and cook on low flame until meat is tender.
  • Take out cooked meat in a bowl & set aside for later use.
  • Add rice, cook on medium flame until water dries. 
  • Now add cooked meat and remaining spice mix well and simmer for 15-20 minutes.
  • Now take out the cooked rice into a serving dish, place meat on top and pour fried carrots and fried nuts.
  • Your tasty Kabuli Pulao now ready to serve!
