SPANISH OMELET
Spanish Omelet is a traditional dish of Spanish cuisine also known as tortilla de patatas. It is an easy-to-make and delicious recipe. This delicious and quick egg recipe can be used to serve as breakfast or as a snack. The crispy taste and the smoked flavor is to die for. This omelet recipe uses very few ingredients like eggs, potatoes and bell pepper but is very filling and is an ideal breakfast on days you know you will have a late lunch. This dish can also be served as a dinner. A must-try recipe for all egg lovers.PREPARATION TIME: 20 mins COOKING TIME: 30 mins SERVING: 2
INGREDIENTS
Olive oil divided 4 tbsp
Potatoes thinly sliced into 1/4-inch (500 gm)
Onion (very thinly sliced) 1
Salt 1 & 1/4 tsp
Eggs 8
Hot sauce 1 tsp
Fresh Coriander finely chopped 1/4 cup
Black pepper 1/2 tsp
Garlic (cloves minced) 4
Red bell pepper (finely chopped) 3/4 cup
METHOD
- Heat 2 tbsp olive oil in large non-stick or cast iron pan frying pan over medium heat.
- Add potatoes, onion and 3/4 tsp salt and sauté for 10 minutes, stirring occasionally.
- Meanwhile whisk eggs, hot sauce, coriander, and remaining salt and pepper in a medium bowl. Set aside.
- After potatoes and onion have cooked for 10 minutes, add garlic and red bell pepper.
- Cook till potatoes are tender and onions are lightly browned about 5 minutes.
- Add potato mixture to the bowl with eggs. Stir to mix.
- Heat remaining olive oil in the pan over medium-high heat.
- Add potato & egg mixture and spread into an even layer. Cook until eggs start to set on the bottom, about 2 minutes. Reduce heat to medium-low.
- Cook until almost set, 8 to 10 minutes. Run a spatula around the edge and gently shake the pan to loosen the omelet.
- Place a flat lid or large plate over the pan.
- Carefully flip the pan over so the omelet falls onto the flat lid or large plate.
- Slide omelet back into the pan. Cook till bottom is lightly browned, 5 to 7 minutes. Flip omelet onto a plate and cut into wedges.
