MUTTON KUNNA
Mutton Kunna is one of rich and traditional meat dish in Pakistan that has a thick gravy.It tastes great with naan and roti.Must try it!
PREPARATION TIME: 20 mins COOKING TIME: 1 hour SERVING: 4
Desi Ghee/oil 1/2 cup
Mutton 750 gm
Onion 1 medium (sliced)
Ginger garlic paste 1 tbsp
Red chili powder 1 tsp
Kashmiri chilli 2 tsp (added for red color)
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Cumin seeds 1 tsp
Salt to taste
Water as required
Other:
Yogurt whipped 1/2 cup
Flour 1 tbs or as required
Water 1 cup
Ginger as required (julienne)
For kunna Spices:
Caraway seeds 1 tsp (roasted and crushed)
Whole spice powder 1/2 tsp
Star anise powder 1 pinch
Nutmeg 1 pinch
Green cardamom powder 1 pinch
Mace powder 1 pinch
For Garnish:
Ginger (julienne)
Green coriander (chopped)
Green chilies (chopped)
METHOD
- In a clay cooking pot heat desi ghee/oil and add meat, onion, ginger garlic paste, red chili powder, turmeric powder, coriander powder, Kashmiri chili, cumin seeds, salt and water,mix well.
- Cover and cook over medium heat for about 1 hour or until meat is done.
- For kunna Spices:
- Take a small bowl,add caraway seeds (roasted and crushed), whole spice powder, star anise powder, nutmeg powder, green cardamom powder and mace powder mix well and set aside.
- Add whipped yogurt and cook on high flame for 2-3 minutes.
- Dissolve flour in 1 cup water and stirring carefully pour it into the mutton gravy.
- Next add kunna spices, cover and put it on simmer for 10 minutes until oil comes on top.
- In last garnish with julienne ginger, green coriander, green chilies and serve with naan
