PRAWN BIRYANI/JHINGA BIRYANI

Prawn Biryani - dainty and delightful, a biryani that will make you ask for more and more. It is a super easy and quick aromatic rice and shrimp dish that your entire family will thoroughly enjoy.

PREPARATION TIME: 20 mins        COOKING TIME:40-45 mins   SERVING: 4

INGREDIENTS

Cooking oil 1/2 Cup
Black cardamom 1
Green cardamom 2-3
Cinnamon stick 1
Black peppercorns 1/2 tsp
Star anise 1
Cloves 3-4
Bay leaves 1
Cumin seeds 1 tsp 
Ginger garlic paste 1 tbsp
Green chilies crushed 1 tbsp
Tomatoes peeled & ground 3 
Paprika powder 1 tbsp
Salt to taste
Turmeric powder 1 tsp
Coriander powder 1 tsp
Roasted & crushed Cumin seeds  1 tsp
Yogurt whisked 1 Cup
Onion fried 1/2 Cup
Prawns cleaned 500 gm
Whole spice powder 1 tsp
Rice (sella) 500 gm (soaked & boiled until 3/4 th done with whole spices & salt)
Onion fried handful
Fresh coriander  Cup
Yellow food color 1/2 tsp + Water 1 tbsp 

METHOD
  • In a pot, add cooking oil, black cardamom, green cardamom, cinnamon stick, black peppercorns, star anise, cloves, bay leaves, cumin seeds and mix well.
  • Add ginger-garlic paste and mix well.
  • Add green chilies and mix well.
  • Add ground tomatoes and mix well.
  • Add paprika powder, salt, turmeric powder, coriander powder, and cumin seeds, mix well and cook for 5 minutes.
  • Add yogurt and mix well.
  • Add fried onion, mix and cook for 2-3 minutes.
  • Add prawns and mix well.
  • Cover and cook on low flame until oil separates then add the whole spice powder, mix well & set aside.
  • Dissolve yellow food color in 1 tablespoon of water
  • In a pot, add half quantity of boiled rice, fried onion, prawn gravy mixture, fresh coriander, remaining boiled rice, fried onion, and yellow food color.
  • Cover and steam cook on low flame for 6-8 minutes.
  • Yummy prawn biryani is ready to eat!
  • Enjoy it with salad and riata!
