CHICKEN SEEKH KEBAB

Seekh Kebabs is one of the most famous and delicious  appetizer made with ground minced meat and a handful of spices and are usually served with a side of green chutney.It is an easy recipe that can be prepared ahead of time and frozen to be warmed up when needed.


PREPARATION TIME: 10 mins        COOKING TIME: 15 mins            SERVING: 8

 INGREDIENTS

Chicken, minced 500 gm
Cumin powder 1 tsp
Red chili powder 1 tsp 
Black pepper powder 1 tsp 
Salt to taste 
Turmeric powder 1/2 tsp
Coriander seeds roasted & powder 1/2 tsp 
Ginger garlic paste 2 tsp 
Green coriander(chopped)5 tbsp 
Whole spice powder 1/2 tsp
Ghee or Butter 1 tbsp
Corn flour 2 tbsp
Onion fried chopped 3 tbsp
Coriander green chopped 4 tbsp
Oil as required

METHOD
  • Take a bowl and chicken, ginger garlic paste, fresh coriander, cumin powder, red chili powder, black pepper powder, salt, turmeric, coriander powder, whole spices powder, corn flour, onion, butter or ghee and mix well.
  • Cover the bowl and refrigerate the mixture for 2 hours.
  • Grease your hands with oil,take a mixture and make kebabs on metal skewers.
  • Heat a drizzle of oil in a non stick pan or grill pan and arrange the kebabs on it. Cook for about 10 minutes or as needed, turning them as needed to brown the seekh kebabs evenly.
  • Garnish with lemon or lime wedges and serve with delicious fresh cilantro or mint chutney.
NOTES:
  • To store: half cook seekh kebabs & freeze (up to 1 month)
  • For a smoky flavour, you can smoke the seekh mixture before shaping the kebabs by placing a lit coal on a piece of foil and placing it in the middle of the bowl holding the mixture. Then drop a bit of oil on the coal and cover the bowl for 2 minutes to retain the smoke in the bowl for the mixture to absorb it. Once done, discard the coal and proceed with the instructions.
