MUTTON RAAN ROAST 

Mutton Raan Roast is a delicious and full of flavor recipe for any special occasions. This dish takes long time to prepare. The meat is marinated for overnight with yogurt and different mixture of spices and then slow cooked in a pot in old fashion way.Try the recipe for unique taste of mutton roast.

 PREPARATION TIME: 20 mins        COOKING TIME: 2 hours    SERVING: 6-8

INGREDIENTS

Mutton leg 2 kg
Salt 4 tsp or to taste
Coriander Powder 2 tsp
Whole spice powder 2 tsp
Cumin powder 2 tsp
Turmeric 1/2 tsp
Black Pepper powder 1 tsp
Red Chili Powder 4 tsp
Cashew nuts powder 1/4 Cup
Red food color 1/4
Gram flour 2 tbsp 
Ginger paste 1 tbsp 
Garlic paste 2 tbsp
Raw Papaya paste 1/4 cup 
Green chili paste 1/4 cup
Lemon juice 4 tbsp 
Yogurt 1/2 cup
Oil 1/4 cup
Water 1 cup
Oil 4 tbsp 

METHOD
  • Prick the leg of mutton with a fork or knife or put the cuts on leg for better absorption of marinating. 
  • In a bowl add yogurt,papaya paste,lemon juic,gram flour,ginger & garlic paste,green chili paste,cashew nuts powder,red food color,oil,salt and all spice and mix well. 
  • Pour the mixture over the leg and rub it over well and leave for over night in refrigerator.
  • Place the leg in a large pot add water,oil cover and cook on low flame 2 hours. 
  • Serve hot with naan and yogurt chatni.
