BEEF WHITE PULAO
Beef white pulao is a very tasty pulao recipe in which rice cooked in beef stock. Pulao is one of delicate dish that is commonly made in the homes of Pakistan. INGREDIENTS
For Beef Pulao:
Beef 500 gm
Rice (basmati) 500 gm (soaked for 30 minutes)
Onion slice 1
Salt 1 tsp or to taste
Green chilies 4
Yogurt 1/2 cup
Cooking oil 1/4 cup
Cumin seeds 1 tbsp
Green cardamom 3-4
Whole black Pepper 5-6
For Bouquet Garni (Potli):
Cloves 8-9
Fennel seeds 1 tsp
Black cardamom 1
Green cardamom 4-5
Cinnamon stick 1
Bay Leaf 1
Whole coriander 1 tsp
Star anise 1
Cumin seeds 1 tsp
For beef stock:
Water 7-8 cups
Onion 1 slice
Garlic cloves 4
Ginger 1 inch
Salt 1 tsp or to taste
METHOD
For Bouquet Garni (Potli):
- Take a muslin cloth and add cloves, cinnamon sticks, black & green cardamom, whole black pepper, star anise, fennel seeds, coriander seeds, cumin seeds, bay leaves and warp it to make a bouquet garni (potli).
- Now, in a cooking pot, add water, salt, ginger, garlic, onion, spices bag and bring it to boil,cover and cook until meat is done and 4 cups stock left.
- Strain the beef stock and set aside.
- In a cooking pot add oil and onion,fry until golden brown then add ginger garlic paste and mix well.
- Now, add boiled meat, yogurt, cumin, black pepper, green cardamom, green chilies, salt and mix well.
- Now add 4 cups beef stock, boil it then add soaked rice, cook on high flame until water dries,cover and steam cook for 10 minutes.
- Your tasty Beef White Pulao is ready. serve with yogurt dip (raita).
