MUTTON YAKHNI PULAO

Mutton Yakhni Pulao is certainly one of the most incredible rice dishes which are made on every special family occasion.The basic ingredients used in this recipe are mutton meat, rice, yogurt and whole spice powder. It is not spicy as mutton biryani. This recipe can be prepared by making Yakhni (broth or stock) separately and cooking rice in that rice for the perfect taste and serve with raita. INGREDIENTS

For Mutton Yakhni (broth or stock):

Mutton 500 gm
Cumin seeds 1 tsp 
Coriander seeds 1 tbsp 
Fennel seeds  1 tsp
Black pepper corns 1 tsp 
Black cardamom 1 
Cloves 6-7 
Nutmeg 1/4 piece 
Mace 1/2 tsp 
Green cardamom 4-5  
Cinnamon sticks 3 
Water 1.5 liter
Garlic 6 cloves 
Onion 1 medium 
Salt 1 tsp or to taste 

For Making Pulao:

Oil 1/2 Cup 
Onion sliced 1 medium 
Black pepper corns 1/2 tsp 
Green cardamom 3-4 
Cloves 4 
Cumin seeds 1 tsp 
Whole Green chilies 5-6 
Ginger garlic paste 1 tbsp 
Yogurt (whisked) 1 Cup 
Salt 1 or to taste 
Black pepper crushed 1/2 tsp 
Mutton Yakhni (broth or stock) 3 Cups 
Rice (Basmati) 500 gm (soaked for 30 minutes)

METHOD

For Mutton Yakhni (broth or stock):
  • For Mutton Yakhni (broth or stock):In muslin cloth, add cumin seed, coriander seeds, fennel seeds, black pepper corns, black cardamom, cloves, nutmeg, mace, green cardamom, cinnamon sticks and warp it to make a bouquet garni (potli) & set aside.
  • In pot add mutton, water, bouquet garni (potli), garlic, onion, salt and bring it to boil, cover and cook on low flame until mutton is tender.
  • Remove bouquet garni and discard it.
  • Strain mutton stock and save it for later use (approx. 3 Cups),set aside cooked meat and discard onion and garlic cloves.
For Making Pulao:
  • In pot,add oil and onion mix well, then add black peppercorns, green cardamom, cloves, cumin seeds and mix well, fry until onions are brown.
  • Add cooked meat, ginger garlic paste, yogurt, salt and black pepper crushed mix well for 2-3 minutes.
  • Add mutton stock and bring it to boil,add rice and whole green chilies, mix well.
  • Cook until water is reduced to 1/4 cup,cover and steam cook for 10-12 minutes.
  • Your tasty mutton yakhni pulao is ready, serve with raita..
