LAHORI MURGH CHOLAY (LAHORI CHICKEN AND CHICKPEAS)
Murgh Cholay is one of the most traditional, aromatic dish of Lahore (Punjab). This dish is full of nutrients as much as it’s full of taste, its key ingredients are chicken and chickpeas in a flavourful tomato sauce resulting in a finger-licking curry that goes well with naan, parathas or rice.
PREPARATION TIME: 20 mins COOKING TIME: 30 mins SERVING: 3
Chickpea 1 cup (boiled)
Chicken 500 gm
Yogurt 1 cup
Oil 1/2 cup
Onion 2 medium (sliced)
Cumin 2 tsp
Whole coriander 2 tsp
Cinnamon stick 1
Mace and nutmeg 1/2 tsp
Black pepper 1 tsp
Red chili powder 1 tsp
Ginger & garlic paste 1 tsp
All spice powder 1 tsp
Salt to taste
Green chilies 4 (chopped)
Fresh coriander 1/2 bunch
METHOD
- Heat oil in a pan, add chopped onion and fry till golden brown.
- Now take the fried onion out of pan and blend with yogurt.
- Add chicken in oil with ginger garlic paste, red chili and salt, fry till color of chicken changes.
- Now pour blended mixture in chicken and stir for 2 - 4 minutes, then add 1 cup water and cook for 10 minutes.
- Separately roast cumin, whole coriander, cinnamon stick, mace and nutmeg and black pepper on a flat pan.
- Grind this mixture and sprinkle it over chicken.
- Add in boiled chickpea and cook for 20 minutes on low flame.
- Sprinkle all spice powder, chopped green chilies, coriander just before turning the heat off.
- Serve with naan bread, parathas or rice.
