Oil 1/2 cup
Cumin seeds 1 tsp
Black pepper 5-6
Cloves 2-3
Black cardamom 1
Onion sliced 2
Tomato sliced 4
Mutton Liver 700 gm
ginger garlic paste 1 tbsp
Turmeric 1 tsp
Red chili 1 tbsp
Coriander seeds roasted & crushed 1 tbsp
Whole spices powder 1 & 1/2 tsp
Salt to taste
Dried fenugreek leaves 1 tbsp
Fresh coriander 2 tbsp
Green chilies chopped 4
Ginger (julienne) 1 tbsp
METHOD
- Heat oil in a pan and add cumin seeds, black pepper, cloves, black cardamom and ginger & garlic paste and fry for 1-2 minute.
- Add onion and fry until onions are brown then add tomato and cook until they are soft then add liver and fry until it changes color.
- Add turmeric, red chili, coriander seeds and cook for 12-15 minutes on low flame, then add whole spice powder.
- Add salt, dried fenugreek, thin sliced ginger, green chilies, and green coriander and steam-cook for 2 minutes.
- Once the oil comes on top, remove from the stove.
- Special kaleji masala is ready. Eat and enjoy!
