SPECIAL MASALA MUTTON KARAHI
Recipe for Eid ul Azha by Cuisine Valley (Eid Recipe)

Yogurt 1 Cup
Cooking oil 1/2 Cup
Mutton mix pieces 500 gm
Ginger & Garlic paste 2 tbs
Salt 1/2 tsp or to taste
special masala 1 tbsp
Green chilies chopped 3
Fresh coriander chopped
Ginger julienne
For special masala:
Kashmiri paprika 125 gm
Whole Red chilies 125 gm
Mace 1 tsp
Black pepper 1 tbsp
Cumin seeds 100 gm
Star anise 3
Cloves 5
Green Cardamoms 8
Dry Coriander 4 tbsp
METHOD
- Fry all spices one by one on skillet and grind them well. Store them in an airtight jar.
- Boil mutton mix pieces well until done.
- In bowl add yogurt whisk well & set aside.
- In wok heat oil and add mutton fry on high heat until mutton turns to brown colour.
- Add chopped green chilies and garlic ginger paste.
- Fry it well for 2 to 3 minutes, then add whisk yogurt.
- Add salt and special masala, and fry on high flame for 2 to 3 minutes, until oil appears as a separate layer.
- Now garnish with ginger flakes, coriander and serve hot with Naan and salad.
