Khoya Or Mawa is a dried evaporated milk solids.the milk is slowley simmered in a thick bottomed pan,till all its moisture evaporates and it reduce to solids.Khoya Or Mawa is one the most frequently used ingredients for making numerous sweet and savory dishes.. So, here is a detailed recipe for making khoya.
PREPARATION TIME: 05 mins COOKING TIME: 45 mins SERVING: 4
Milk 1 liter (5 cups)
METHOD
- Pour the milk in a large thick bottomed pan and place the pan on the stove top.
- Once the milk comes to a boil, let it simmer and reduce on medium-low flame.
- Keep stirring after every 3-4 minutes.
- Don’t forget to stir with scraping bottom of the pan and also sides of the pan, and cook on medium low flame for approx. 45 minutes.
- When the milk become thick in consistency as of solid or dense like halwa then start stirring it continuously.
- Turn off the flame. Transfer the prepared khoya or mawa in a bowl.
- Storing khoya or mawa : once cools completely, it can be refrigerated up to 10 days in airtight container. Or you can freeze it for a month or more.
- Serving suggestion: Khoya or mawa is used for making a delicious sweet and savory dishes.
