ZARDA (SWEET RICE)

INGREDIENTS

A Perfect Zarda Recipe by Cuisine Valley.
Rice 1 cups (Soaked for 2 hours)
Sugar 1 cups or to taste
Ghee 1/4 Cup (Preferably desi ghee)
Pistachios 2 tbsp
Almond 2 tbsp
Cashew nut 2 tbsp
Coconut 2 tbsp (Chopped)
Raisin 2 tsp
Green cardamom 3-4
Cloves 4
Zarda food color 2 tsp
Kewra Essence 1/2 tsp
Water 6-8 cups
Salt 1/2 tsp
Khoya/Mawa 1/2 Cup
Ashrafiyan 1/2 Cup
Pink gulab jaman mini 
White gulab jaman mini 

METHOD
  • In a pot,add water, bring it to boil.
  • Add salt. Dissolve zarda food color in water, add it to pot and mix well.
  • Add soaked rice and bring it to boil,cook until rice are done.
  • Strain rice and set aside.
  • Now take a pot and add ghee,green cardamom and cloves, slightly fry it. 
  • Add boil rice, sugar.Cover and cook until sugar completely dissolves.
  • Place griddle on stove and put back pot over griddle.
  • Put it on simmer for 10 minutes.
  • Add kewra essence,ashrafiyan, khoya,dry fruits/nuts.
  • Cover and steam cook for 10 minutes.
  • Zarda is ready & serve.
