BAKED MARINATED CHICKEN

Try this delicious recipe for basic baked chicken with the breasts or the whole chicken and surprise your family and friends.




PREPARATION TIME: 10 mins        COOKING TIME: 25 mins        SERVING: 6

INGREDIENTS

Boneless chicken breasts or thighs, cut into 2-inch 1 kg
Oil 3 tbsp 
Onion 1 (finely chopped) 
Green chili 2 (finely chopped) 
Yogurt 1 cup (whisked) 
Mint leaves 2 tbsp (chopped)
 
For Yogurt-Mint Marinade: 

Ginger & garlic paste 2 tbsp 
Mint leaves 2 tbsp
Yogurt 1 cup (whisked) 
hot spice powder 2 tsp
Salt to taste

METHOD
  • Mix the ingredients for the Yogurt-Mint Marinade together in a large bowl.  
  • Add the chicken and mix well, making sure all the chicken pieces are well coated with the marinade. 
  • Cover with plastic wrap and marinate in the refrigerator 4 to 6 hours.  
  • Preheat the oven to 350°F (175°C). 
  • Heat the oil in an ovenproof saucepan with a tight fitting lid over medium heat, and cook the onion, stirring often until brown, about 7 minutes. 
  • Add the green chili and stir for 1 minute. 
  • Add the yogurt a little at a time, stirring constantly to prevent it from curdling. Cook until it comes to a boil.
  • Mix in the chicken, plus the marinade. Cook, stirring for about 5 minutes. 
  • Remove from the heat and cover with the lid.  
  • Place the pan in the oven and bake until the chicken is cooked through and tender, about 20 minutes. 
  • Serve hot, garnished with the mint leaves.
