SHEER KHURMA (EID SPECIAL)

Sheer khurma is a special recipe that is usually always made during the festive occasion of Eid-ul-Fitr (also known as meethi Eid).Sheer khurma 'Sheer' is Persian for milk and 'khurma' is another word for dates. It is a celebratory vermicelli sweet served on days in Muslim community in Pakistan, India and Bangladesh.
As soon as the month of Ramadan ends every muslim family eagerly waits to make this dish and relish on it during eid – ul- fitr.Sheer khurma recipe consists of a delicious combination containing Milk, vermicelli, and dry fruits.

This traditional dessert recipe is specially prepared for Eid day and served to the family after Eid prayers as a traditional breakfast and is also presented to the visitors throughout the festival of Eid..Eid celebration are kind of incomplete until and unless you have Sheer Khurma!

INGREDIENTS

Vermicelli crushed 3/4 Cup

Ghee or Butter 3 tbs

Milk 1 & 1/2 litre

Sugar 1/2 Cup or to taste

Dry dates soaked 3 hour 1/2 Cup

Coconut (small sliced) 2 tbsp

Almonds soaked & peeled (sliced) 4 tbsp

Pistachio (sliced) 4 tbsp

Raisins soaked 2 tbsp

Green Cardamom 3 - 4

Kewra water 1 tsp

METHOD

In pot,add milk,sugar and cardamom seeds,mix well and bring it to boil,cook on low flame for 10-15 minutes.
In frying pan,add ghee and let it melt,add dry dates, raisins and fry for 1 minute.
Add coconut, pistachio and almonds,fry for 1-2 minutes and set aside.
In a pan fry vermicelli in 1 tablespoon ghee on slow to medium flame until fragrant and set aside.
In milk,add fried vermicelli,mix well and cook on low flame for 3-4 minutes.
Add fried nuts mix and simmer for 8-10 minutes.(save some nuts for garnish.)
Add kewra water (for fragrance) and mix well.
Sheer Khurma is ready.
Transfer in serving bowl and serve warm or chilled... and enjoy
