CHICKEN BIRYANI

Chicken Biryani is the most popular dish in Pakistani. From restaurants to home, We found Chicken Biryani everywhere. Chicken Biryani is the combination of rice and meat cooked with desi spices.

Chicken biryani can be prepared in many varieties, depending on the region, taste, and preferences like Bombay biryani and Sindhi biryani, Hyderabadi biryani, Tikka biryani and much more.  It is very easy now to make such a wonderful and mouth watering biryani like restaurant at home.Follow these steps to make perfect chicken biryani.




PREPARATION TIME: 20 mins        COOKING TIME: 40 mins            SERVING: 6

INGREDIENTS

For gravy:
Oil 1/2 cup
Tomatoes 4 (raw pureed)
Dried plums 4-5

Marinate Chicken:
Chicken 1 kg
Yogurt 1/2 cup
Spices:
Red chilli powder 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tsp
Salt to taste
Red chili crushed 1 tbsp
Whole spice powder 1/2 tbsp
Ginger & garlic paste 2 tbsp
Lemon juice 2 tbsp
Turmeric powder 1 tsp

Other ingredients:
Yellow food color 1/2 tsp or as required 
Fresh coriander chopped 1/2 Cup 
Mint leaves  1/2 Cup 
Green chilies 5-6

For Rice:
Basmati rice 1/2 kg (soaked in water for 30 minutes)
Whole bay leaf 2
Salt to taste 
Water , to boil rice
Oil 2 tbsp
Clove 4-5
Black pepper corn 10
Green cardamom 4

METHOD

For chicken:
  • Marinate chicken with spices and yogurt and let it sit for 30 minutes.
For gravy:
  • First put oil in a wok and heat it well add  onions and fry until they are golden.
  • Add marinated chicken, cook for 7 minutes until color changes then add tomato puree, dried plums and mix well. and cook for 10-15 until all tomato water dries and oil separates.
For Rice:
  • Now heat up water in a pot for boiling the rice. Add salt, green cardamom,clove,black pepper corn, oil, bay leaf and boil the water.
  • When water is boiled put rice in the pot and cook until 3/4th done.
  • Strain the rice, and keep aside.
For Assembling:
  • Then take a large pot add 1 tbsp oil
  • Make first layer of 1/2 rice in the bottom then add a layer of half of chicken gravy. spread fresh coriander, mint leaves, green chilies.
  • Now make second layer add the reaming rice. Layer the reaming chicken mixture on top of the rice, spread fresh coriander, mint leaves, green chilies and sprinkle with yellow food color.
  • Cover and steam cook on low flame for 8-10 minutes.
  • Delicious CHICKEN BIRYANI is ready. Serve with raita and salad.
