AROMATIC LAMB WITH GREEN PEAS AND CUMIN
This dish is so good that I often make extra portions to use the next day. Ground beef can be substituted for the lamb.
PREPARATION TIME: 15 mins COOKING TIME: 30 mins SERVING: 6
oil 3 tbsp
Onions chopped 2
Cumin seeds 1 tsp
Minced fresh ginger 2 tbsp
Cloves garlic, minced 4
Green chili chopped 4
Bay leaves 2
Ground lamb 1 lb (500 g)
Tomato chopped 2
Turmeric powder 1/2 tsp
Red chili powder 1 tsp
Ground coriander 2 tbsp
Plain yogurt 2 tbsp
Salt to taste
Ground black pepper 1 tsp
Water 1/2 cup
Frozen peas, thawed 1 cup (150 g)
All spice powder 1 tsp
Ground cumin 2 tbsp
Chopped fresh coriander leaves (cilantro) 5 tbsp
METHOD
- Heat the oil in a large saucepan over medium heat.
- Add the onions, cumin, ginger, garlic, green chili and bay leaves and fry for 3 to 4 minutes, until golden brown.
- Add the ground lamb and fry for 15 minutes, stirring occasionally to prevent the meat from sticking.
- Add the tomato , stir, and lower the heat to a simmer.
- Add the turmeric, chili powder and ground coriander, and stir for 1 minute.
- Add the yogurt, salt and pepper, and continue frying for 5 minutes.
- Add the water and peas, and simmer until the lamb is cooked and tender, about 10 minutes.
- Stir in the hot spice powder, cumin and coriander before serving.
