TAMARIND AND DATE CHUTNEY( Khajur Imli Chutney)

The word "chutney" is derived from the "Hindi word chutney meaning to lick". There are so many varieties of chutney .Here, we're presenting tamarind and date chutney.Khajur Imli Ki Chutney or the Date Tamarind Chutney is a sweet and sour tangy chutney made from dates tamarind and jaggery. The Khajur Imli  Chutney recipe is an essential component in Chaats like Pani Puri, Samosa and more. Spreading this chutney over chaats is an absolute must to have the best chaat experience.






PREPARATION TIME: 10 mins        COOKING TIME:15 mins            SERVING: 6-8 

INGREDIENTS

Tamarind  seedless 1/4 cup

Dates seedless 1/2 cup

Jaggery (Gud) 1/2 cup

Red Chilli Powder 1/2 tsp
Cumin Powder 1/2 tsp
hot Water 3 cups
Cumin Seeds 1/4 tsp
Cooking Oil 1 tsp

METHOD

  • Chop dates,jaggery into small pieces,
  • Soak chopped dates in 3 cups hot water for 10 minutes.
  • Add tamarind to soaked dates and boil them together over low flame for approx. 8-10 minutes or until dates become soft and tender.
  • Turn off the flame and let them cool for 10 minutes. Transfer tamarind, dates and water to a mixer jar and blend until a smooth puree. Place strainer over a bowl and pour the puree over it.
  • Heat oil add cumin seeds, then add tamarind puree, jaggery and salt, chilli powder stir until jaggery is dissolved. Boil over medium flame for 4-5 minutes. Turn off the flame.
  • Let it cool at room temperature and transfer to a bowl.
NOTE:

  • If chutney becomes too thick you can increase a proportion of water to make it liquid.
  • Same way if you want less sweet and tangier, then increase tamarind seeds and lessen the amount of Jaggery.
  • You can store the chutney of sweet tamarinds in airtight container and keep in a fridge for a week.
  • Next time if you want to use it would have become frozen, so you have to heat it.
  • You can deep freeze this chutney and use it for 6 months.
  • If you want to make it ahead of any occasion, then the best time is to prepare it two days before.
