CHOCOLATE AND PEPPERMINT BUNDT CAKE
Chocolate and Peppermint Bundt Cake- Moist and perfectly delicious cake is perfect for holiday dessert!PREPARATION TIME: 25 mins BAKING TIME : 1 hour SERVING: 16
INGREDIENTS
Eggs 4Sugar 2 cups
Unsweetened cocoa ¼ cup
Unsalted butter 1 cup at room temperature
All purpose flour 3½ cups
Baking powder 3 tsp
Salt 1/4 tsp
Milk 1 cup
Peppermint flavoring or extract 1/2 tsp
Green food coloring 2 tsp
Vanilla extract 1 tsp

METHOD
- Center a rack and preheat the oven to 350 degrees F. Prepare the 12 cup Bundt pan or a 10- inch tube pan.
- In a small bowl, combine ½ cup of the sugar and all the cocoa. Set aside.
- With the mixer, cream the butter at medium speed, gradually adding the remaining 1 ½ cups of sugar. Include the eggs, one at a time, beating well after each addition.
- In a separate bowl, dry whisk the flour, baking powder, and salt together.
- With the blender on low speed, add 1 cup of the flour mixture, beat, then add ? 1 cup of the milk and beat again.Repeat until all of the flour mixture and milk are blended into batter. Beat on medium speed for 2 to 3 minutes.
- Pour half of the mixture into a medium bowl.
- Add the peppermint flavoring and a couple of drops of green food coloring to one bowl of batter.
- NOTE:
- don’t use too much food coloring, just enough to get it a pastel green. Mix well.
- Pour two-thirds of the now green batter into the bottom of the cake pan. Set aside the remaining green batter
- Add the cocoa and sugar mixture to the yellow batter and add the vanilla extract. Beat until smooth.
- Using your spatula, pour the chocolate-flavored batter over the green batter in the cake pan.
- Layer the remaining green batter over the chocolate batter. Then marble
- Bake for 1 hour. When the cake tests done, cool for 15 to 30 minutes in the pan, then unmold onto a cake rack.
