CHICKEN AND VEGETABLE SPRING ROLL

Everybody's favourite Spring Rolls, made at home! These delicious rolls are a perfect choice for snacks. Also having the nutrient value of vegetables these rolls are a better snacking-choice for iftar during the month of  Ramadan.




PREPARATION TIME: 30 mins        COOKING TIME: 20 mins            SERVING: 12

INGREDIENTS

Chicken Breast (boil & shredded) 2 cup
Onion small (sliced)  1
Garlic chopped  1 tbsp
Cabbage (sliced) 1 1/2 cup
Carrots (sliced) 1 cup
Spring Onion green  1/4 cup
Salt 1 tsp or to taste 
Red chilli flakes 1 tsp
Black pepper crushed 1 tbsp
Soy sauce 2 tbsp
Spring Rolls Sheets 15-16
Oil for frying
All-purpose flour 3-4 tbs
Water as required

METHOD

Prepare the Filling:
  • In pan,heat oil, add garlic, onion and saute for 30 second. 
  • Then add chicken,carrot,cabbage and give it a good mix.
  • Add salt,black pepper crushed,soy sauce, red chilli flakes, green onion and stir-fry for 2-3 minutes & set aside.(completely cool  for 15 mins.)
Wrapping Spring Rolls:
  • In all-purpose flour,add water and mix well to form a smooth paste.
  • Take roll sheets,add 1 tbsp filling and fold both sides, (see photos for instructions) apply all-purpose flour paste and fold it. chicken spring rolls and covered with plastic wrap to prevent drying.
  • Prepare the remaining rolls similarly (yields: 15-16 rolls) 
Frying Spring Rolls:
  • In pan,heat oil and fry until golden brown.
  • Served hot with chilli garlic sauce.

HOW TO FREEZE SPRING ROLLS ?
  • After you wrap the spring rolls, you can keep store them in the freezer for future use. However, they tend to stick together easily.
  • You can follow the following method to avoid this:
  • Place a sheet of plastic on a large tray.
  • Arrange the spring rolls neatly on the plastic sheet, with the seam side down. (It helps secure the corner so that it doesn’t pop out)
  • Freeze the spring rolls until hard enough. Once they are frozen, they will not stick to each other anymore.
  • Keep the spring rolls in a container and freeze.
  • You can deep fry the frozen spring rolls directly.
